- As a former line cook, I have grown accustomed to quick-fire results and immediate satisfaction. Making hyper-realistic cakes is quite the opposite! The proposed cake is first drafted out on a drawing board then made into stencils from every angle. This is before the initial cake construction and covering; all of these steps priming the cake to transform into art. A background in art, drawing, sculpting and of course, pastry seem to come in handy for this task-none of which I have much experience in. As I’m guided through the process by Kate Sullivan of Cake Power, my appreciation for the skills required to pull this off increase dramatically.

I honestly think fondant tastes gross but I appreciate the creativity
Fondant *is* gross. I can't think of a single person who likes the taste, and my wife's a baker. But it's really, really moldable and can blend together, so it's kind of the default for skins of 3D cakes. And it's dead easy to make: dome of powdered sugar and melted marshmallows, fold and knead, fondant. Until someone figures out a tastier alternative that's as cheap, it'll be fondant everywhere.

If it uses fondant, it doesn't count in my mind. The stuff is so inedible, you might as well just make it out of plastic.

So what happened to the 4 toothpicks they put inside the cake for the ears ? They stay inside and hope that nobody puts a huge nite inside their mouth with a piece of toothpick in it ?
Yup. Some folks use more decorative toothpicks, the ones that have flair and detailing on one end, and they put that end in the decoration and the smooth bit in the cake itself so it's almost guaranteed to come out properly. But wedding cakes also have structural elements to hold up higher layers and cardboard between the layers. There is an assumption of common sense that is, frankly, unwarranted considering the complete insanity of some customers.
All sculpted cakes have supports. You inform the client of what and where they are
